Mashed Sweet Potatoes with Cinnamon and Maple Syrup

This little sweet side dish is an amazing source of Beta-Carotene, which helps to lower the risk of heart disease, strokes and cancer.

900g of sweet potatoes, peeled and chopped
pinch of salt
1 cinnamon stick
15ml of maple or maple flavoured syrup
Blob of butter

Place the sweet potatoes, salt and cinnamon stick in a medium saucepan. Add just enough water to cover the potatoes.

Boil for 20 minutes uncovered, stirring occasionally until the potatoes are tender.

 Drain and discard the cinnamon stick.

Return the potatoes to the saucepan add 10ml of the syrup and the butter.

Mash then serve, drizzled with remaining maple syrup.
