Root Vegetable Soup with Bacon

If you are looking for a healthy soup with wonderful vitamins and minerals then this the soup for you. The soups is a delicous blend of sweet potatoes, carrots, onions, potatoes, and other nutritious vegetables.

Ingredients:

10ml Olive Oil
1 large onion - finely chopped
2 stalks celery - chopped coarsely
sprig of thyme
Following  vegetables all peeled and coarsely chopped:
2 medium carrots
1 large sweet potato
1 medium parsnip
1 large potato
1/2 green pepper
2 cups of chicken or vegetable stock
pinch of salt
310ml milk
15ml balsamic vinegar
few rashers of bacon cooked until crispy and then chopped coarsely

Method:

Heat the oil in a large saucepan over medium heat.
Add the onion, celery and thyme. Saute for 5 minutes until soft.
Add the carrots, sweet potato, parsnip, potato, green pepper, stock and salt.
Add just enough water to cover the vegetables.
Cover and simmer for 30 minutes or until the vegetables are tender.

In a blender, puree half the soup until smooth. Return the puree to the saucepan. Stir in the milk.
Heat gently. Stir in vinegar, sprinkle with the crispy bacon.
Serve...
