Mustard Glazed Brussels Sprouts




This is how I like to make my brussels sprouts. Its really easy and bursting with amazing flavour.

For making it into a really healthy meal, you can serve it with roast chicken, a lovely green salad on the side and a nice fruit that it in season for dessert, like sweet melon (spanspek).

Mustard Glazed Brussels Sprouts:

300g Brussels Sprouts
1 Spring onion
knob of butter
Sea Salt
Freshly Ground Pepper
5ml Caraway Seeds
Good dollop of Djion Mustard or wholegrain mustard

Blanch the Brussels sprouts for 3 min.

Drain

On a small saucepan, heat the butter, add the brussels sprouts and the caraway seeds saute for 3 min. Add the spring onion, season with salt and pepper. Saute for another 2 min. Stir in the djion mustard and cook for another 2 min. Serve immediately.

The Best Brussels Sprouts Ever!!!

This is a recipe from Gordon Ramsay and according to all the comments its the best brussels sprout recipe ever. The combination of flavours is just out of the world. If you have hated brussels sprout it is recommended that you try this recipe first. The recipe calls for goose fat. ( Im not to sure where we will find this in South Africa, maybe because I havent really looked. Something in the back of my mind is telling me that I have seen it in a tin but not to sure if I'm confusing it with something else. I will have a look and tell you all about it.) I am thinking that its the Goose fat that makes this dish!!
  
Ingredients:

1kg  Brussels sprouts

100g thinly sliced bacon or pancetta
 4.0 tbsp hot goose fat
 a handful of shredded sage


Method:

Blanch the Brussels sprouts in a pan of boiling salted water for 3 mins, then drain and tip into a bowl of iced water to cool quickly. Drain well again and set aside until nearly ready to serve. Sauté the pancetta/bacon in the hot goose fat until crisp. Toss in the sprouts and stir-fry for 2-3 mins, adding the sage to serve.

  1. The Gordon Ramsay way of making Brussels sprouts does sound yum with the bacon! (Never thought I could say that about Brussels sprouts!) BUT the idea of them with pine nuts sounds good too! Thanks Abby!
