Fudgy Coconut Browniess

This is a really easy and cheap brownie recipe that taste really great. Indulgent, gorgeous, sticky, squidgy, chocolate heaven.

Amazingly most brownie recipe requires chocolate bars but this you use cocoa instead. I was suprised at how rich they came out.

Funny thing when I made these my hubby said: "Now why don't you make these for us?"

He is not really a cake person and I said to him: "You always complain when I want to make something cakey, so now my work collegues are my new guinea pigs!"

After making this for the ladies at work, the said they will be happy to be my "guinea pigs" - ANYDAY!!

You can play around so much with this recipe. I added orange zest and handful of walnuts. They went down really great at the office. I can imagine adding raspberries and white chocolate bits, add a tot or two of Malibu for an extra coconut flavour, cranberries, cherries, different nuts, you can go crazy with this recipe.

So here goes the recipe:




INGREDIENTS:

100g cocoa

250g butter

500g caster sugar

4 eggs
 
100g self-raising flour

100g desiccated coconut

Zest of an orange

Handful walnuts - crushed

icing sugar , to dust (optional)


METHOD:

Heat oven to 180C. Line the base of a 21cm square tin with baking paper.

Add the cocoa, butter and sugar in a medium to large saucepan and gently melt, stirring so the mixture doesn't catch at the bottom of the saucepan.

When the cocoa mixture is melted and combined, cool slightly, then stir in one beaten egg one at a time , followed by the flour and coconut which get added little by little. Stir in the walnuts and orange zest.

Tip into the tin and bake for 30 - 45 mins on a middle shelf - check after 30 mins and cover with another piece of baking parchment if the crust is browning too much. Cool in the tin, then carefully lift out and cut into squares.

Dust with icing sugar.

These dense and gooey, storecupboard treats will become a household favourite.
