When I made the Millionaires Chocolate Tart the other day, I had a few egg whites left, which I really didn't want to go to waste. So what is the best way to use egg whites?
Yes you guessed it!! The best way to make use of egg whites is to make Meringues. I did a bit of my own spin and it was fantastic.
They were soft and chewy in the center with a suprise cherry center and the outer parts just melt completely away in you mouth. Just the way I like them.
So here is the recipe -
5 egg whites
pinch of salt
2.5ml cream of tartar
250ml castor sugar
drop of blueberry essence
drop of crimson food colouring
cherries - I used maraschino cherries (1 in each Meringues)
Behind the Method:
Preheat the oven to 120C
Beat egg whites with salt and cream of tartar until still - but not dry
Add the food colouring and the blueberry essence
Add the castor sugar, tablespoon at a time beating well done after each addition
I used foil, which I sprayed and cooked very well in order for it not to stick. You can use butter paper or baking paper.
Spoon your meringues onto the baking tray - push a cherry in the center. I use maraschino cherries and kept the stalk.
And that's that... easy peasy!!!
Did I not mention how they absolutely just melt away in your mouth?
I struggle to make meringues in my oven and always have about 4 egg whites left over after making ice-cream. Any other great ideas for egg whites? We usually end up making scrambled eggs with them.

You can do pavlova - if your oven allows you to make it
Or you can freeze them and keep them for a raining day - the freeze quiet well. When needed just pop them in the fridge and allow to thaw naturally.

THis with the cherries look amazing! Plus if I get an oven... I'll try this (microwave even on convection microwave and meringues... um.. does not compute ;-)) hehe. Pavlova is a yummy idea too!
