This recipe is definately one to spice up your midweek meals. You can serve it as a meal on its own served with couscous or as a side dish.
Ingredients:
1 Onion - chopped
1-2 cloves of garlic - crushed
3cm knob ginger - grated
15ml Curry Paste
500g diced sweet potatoes
1 can (410g) chopped tomatoes
Juice of a 1/2 lemon (+-30ml)
500ml chicken stock
300g cauliflower florets
Method:
Heat the oil in a large non-stick saucepan. Saute the onion, garlic, ginger and curry paste for 5min.
Add sweet potatoes and stir to combine the fantastic flavours.
Add the tin of tomatoes, lemon juice, chicken stock and simmer for 20min.
Season with salt and pepper according to taste.
Add the cauliflower and if need be some extra stock. Cook for another 15min or when the vegetables are tender.
Serve:
Add a dollop of plain yoghurt and a sprig of coriander. If you want you can serve it with rice, naan bread but I personally find that couscous gives that something extra special...
