Mushrooms on Toast

Serve these on Toast for a quick and tasty starter and serve with crusty bread. If you can find Shiitake Mushrooms add them to this recipe for a richer and robust flavour.

Serves: 4

Ingredients:

450g  Button Mushrooms - sliced if they are to large
45ml Olive Oil
45ml Vegetable Stock or Water
30ml Dry Sherry
3 cloves of garlic
115g low fat soft cheese
30ml fresh parsley
15ml fresh chives
Salt and Pepper

Method:

Put the mushrooms into a large saucepan with olive oil, stock/water, and sherry. Heat until bubbling then cover and simmer for 5minutes.

Add the garlic and stir well. Cook for another 2 minutes. Remove the mushrooms with a slotted spoon set aside. Cook the liquor until it had reduced to 30ml. Remove from the heat and stir in the cheese and herbs.

Stir the mixture until the cheese has melted. Return the mushrooms to the pan. Stir until well coated. Season with salt and pepper.

Serve the mushrooms on thick slabs of hot crusty bread/toast.
