Grilled Steak with Onions, Tomatoes and Mushrooms

Serves 4:
Cooking Time: 15min
Preparation Time: 15min

Ingredients:
15ml Olive Oil
Nonstick Olive Oil Cooking Spray
2 cloves of garlic - Finely chopped
4 thick slices of red onion
4 large Brown or Portobello Mushrooms (Stems removed)
2 x350g rib eye steaks  
Salt
Black Pepper
3 ripe tomatoes
Few nice fresh sprigs of parsley and chives freshly chopped.

Method:

Preheat the grill. Heat the oil in small frying pan over medium heat. Add the garlic and saute for 2 minutes. Remove and put into a bowl.

Coat the onion slices and mushrooms with the Non Stick Olive Oil Cooking Spray. Grill the onions and mushrooms on both sides for 2minutes or until brown. Slice the mushrooms in thick slices.

Add the mushrooms and onion to the garlic and toss until well coated.

Cut the steaks across the grain into two equal pieces. Pat dry. Season with salt and pepper. Grill the steaks for 3-4minutes until seared. Turn over and grill for another 2-3minutes for medium rare.

Cut each tomato into 6 slices.Place 3 slices on top of the steak, top with the mushroom and onion mixture. Sprinkle with the fresh herbs.
