If you are a fan of oriental and Asian foods then this is definitely a must try. Not only is it deliciously healthy so double up and take extra to work.
Serves 4
Ingredients:
3 stalks lemon grass - bruised and sliced lenghtways
2 cloves garlic - slices
3 chicken breast fillets
1.5L chicken stock
100g golden enoki mushrooms
100g white shimeji mushrooms
45ml fish sauce
Salt and Freshly Ground Pepper
375ml of cooked brown rice - well rinsed
Coriander - Garnish
1 whole red chilli chopped - Garnish
Method:
Place lemongrass, garlic, chicken and stock in a large saucepan.
Simmer for 10-15minutes or until the chicken is cooked through. Remove the chicken from the liquid.
Once the chicken is cool enough, shred and return to the saucepan with the mushrooms and fish sauce.
Cook for an minute and season with salt and pepper.
Spoon the rice into serving bowls and ladle over soup mixture.
Garnish with the fresh sprigs of coriander and chopped chilli.
