Red Cabbage Braised with Apple, Bacon and Balsmic Vinegar.

This recipe is totally AMAZING. I've only had a chance to make it once or twice but it is an absolute winner. It is such a nice combination of sweet, sour and saltiness that makes your taste buds begging for more. This recipe goes well with pork or chicken.

Serves: 4

Ingredients:

15ml Olive Oil
250g of Smoked Bacon
1 Red Onion - Finely Sliced
2 Firm and Crispy Apples - Peeled, Cored and Thinly Sliced
1 Red Cabbage Roughly Chopped (Cored and Outer Leaves Removed)
Freshly Ground Black Pepper and Sea Salt
150ml of Good Quality Balsamic Vinegar
Good Chunk of Butter
Handful of Italian Parsley Chopped

Method:

Pour the Olive Oil in a Saucepan, once it is nice and hot add the bacon. Cook until it is golden. Add the onion with the lid on continue to cook until it is golden and all sticky. Stir in the apples, cabbage, salt, pepper and balsamic vinegar.

Put the lid on and continue to cook the cabbage on a low heat for roughly an hour. Keep an eye on it and stir occasionally.

Once it is cooked serve with a chunk of butter and sprinkle the chopped parsley on top of the cabbage.

Serve Immediately with pork chops and potato wedges....
