South African Burger with a Twist


  
So my last blog article was about some great tips and tricks in making that perfect burger. 

After trying out a few options and different topping I think I may have discovered the perfect South African burger  with a twist.

I found that if you use boerewors (must be boerewors not wors or sausage) you get the perfect meat and fat ratio, with the bonus of some really great flavour. It comes out so juicy and mouth watering your taste buds just keeps on asking for more....


Boerewors Patty Stuffed With Blue Cheese Served with a Tomato and Onion Relish:

What could possibly be more South African than a boerewors roll and a tomato and onion smoor. This burger is made out of good quality boerewors that has been stuffed with blue cheese. Crispy bacon and a sweet tomato onion relish!

Ingredients:


For the Patties:
 
500g (Thick) boerewors (Please use some good quality boerewors, like Grabow, Cederberg etc)
10ml smoked paprika
good dash of Worcestershire sauce
4 slices of bread - crust cut off
1 egg
flour for dusting
250g blue cheese
4 streaky bacon slices

With a sharp pointy knife run your knife all along the boerewors in order to break the casing and put the meat in a mixing bowl. Add the Worcestershire sauce, smoked paprika, salt and pepper. 

The Boerewors removed from its casing.


Whiz the bread in a food processor to make bread crumbs. (this is one of my secrets - the bread crumbs absorbs the fat of the meat this keeps your patty moist and juicy).


Whiz the bread for some lovely bread crumbs...


Add to the meat mixture. 

Add the egg and mix.



Wet your hands with cold water and shape your patties - not to thick or not to small. . Maybe about 10cm in diameter. You should be able to get about 8 patties. (Dont forget some of the tips) 


Slice one or two slices of blue cheese and put on top of the patties. Top with the remaining four patties. Pinching the edges to seal.



Put in the fridge for about 30min while you prepare your other ingredients.


Sweet Tomato and Onion Relish

2 large red onions - peeled and thinly sliced
good knob of butter
125ml of tomato and pepperdew relish (From Woolies)
Salt and Pepper to taste
60ml Sour Cream

Melt the butter and saute the onions until soft and tender, add the tomato and pepperdew relish. Season with some salt and pepper. Stir in some sour cream. Put one side and keep warm.

Butter your buns and put on garnish - I used baby spinach leaves.

Heat your griddle pan.

Take out your patties and dust with flour. I find that this also adds to giving you a lovely crust.



Place burgers and on your grilling pan grill. Grill 5 minutes per side or until done. 
Just before you take the patties off the grill slice one or to more slices of blue cheese and put on top of the patties. 

Once the patties are cooked according to your liking - leave them to rest. 



Fry your streaky bacon until crispy.




Now assemble, put your patty on top of the garnish, the sweet tomato and onion relish and top with streaky bacon. 



... and walla you have a truly amazing burger.
