Dead Easy Cheat Homemade Custard

This is such an easy custard recipe. You do cheat a little, but you can still tell everyone it is homemade custard (not the instant stuff).

Very creamy without using so many egg yolks.  Its not to sweet which will compliment any puddings.

I highly recommend using a vanilla pod or real vanilla paste. The seeds gives it that really nice vanilla flavour plus it adds authenticity of it being homemade. (Wink Wink)

This custard will be a lovely indulgent eating on its own. Maybe with a little sprinkle of cinnamon. I served mine with Summer Winter Pudding.






Dead Easy Cheat Homemade Custard


45g caster sugar
 
15 ml custard powder (the cheating part)

15 ml cornflour

300ml milk

250ml cream

1 egg yolk

1 vanilla pod

250ml tub  crème fraîche
 
Method:
 
Mix the sugar, custard powder and cornflour with 2 tbsp of the milk to make a paste.
 
Beat in the egg yolk. Pour the remaining milk into a pan, slit the vanilla pod lengthwise and scrape in the vanilla seeds.
 
Add the pod and seeds to the milk and bring just to the boil. Remove from the heat.
 
Add your cornflour mix, give it a good whisk and then put back on a medium heat. Add your cream. Whisking/Stirring all the time, until it is thick enough to coat the back of a spoon.
 
Remove from the heat and stir in the crème fraîche. If its to thick you can always thin it out with more milk.
 
Serve Hot or Cold!!

  3. O and if you want to make it slightly more sweeter you can add some more sugar. All depends on how sweet your dessert is.... ;)
