Spinach Soup
This is a lovely light summer soup to serve four people. It is quick, easy and so sophisticated but flavoursome. A real good soup to enjoy!
INGREDIENTS
20g butter
1 onion - chopped
1 clove of garlic - crushed
500g of frozen creamed spinach - thawed
750ml hot water
30ml chicken stock powder
410g can of evaporated milk
10ml lemon juice
pinch of nutmeg
METHOD:
Melt butter and saute the onions and garlic until translucent.
Add the spinach, hot water, stock powder, and evaporated milk.
Simmer for 10 - 15 minutes.
Add lemon juice and nutmeg.
Puree.
Reheat before serving.
Serve garnished with croutons and to add the extra you can reserve some of the evaporated cream or add an extra swill of cream for presentation.
As a lovely summer meal you can serve this soup as a starter, serve chicken breast with green peppercorn sauce as a main and to end the meal a lovely chocolate mousse.
