Broccoli and Bacon Soup

If you find that this soup is a bit to thick you can thin it out with a little milk.

Ingredients:

1 large onion
2 cloves garlic
125g bacon
750ml hot water
3 chicken stock cubes
500g broccoli
250ml milk or cream
freshly ground black pepper
chives for garnish

Method:

Peel and chop the onion and garlic. Cut bacon into small pieces. Heat oil in a large saucepan and fry onion, garlic and bacon until soft and translucent. Add the water and crumble the chicken stock cubes and bring to boil. Add broccoli cover and cook for 10min until just tender. Puree the soup in ablender or food processor. Return to a saucepan, mix in the milk or cream and simmer for 5 minutes. Season with pepper and garnish with chopped chives, dollop of cream and sprinkle some extra crispy bacon.
