Ingredients:
15ml olive oil
225g of spicy sausage - diced
1 medium onion - chopped
4 cloves of garlic - finely chopped
1 litre of beef stock
310ml of water
half a medium savoy cabbage - coarsely chopped
2 medium potatoes, unpeeled and diced
2 medium carrots, peeled and diced
1 medium beetroot, peeled and diced
1 bay leaf
15ml of red wine vinegar
few sprigs of dill - finely chopped
Method:
Heat the oi in a large saucepan. Saute the sausage until browned. Add the onion and garlic and saute until soft.
Add the stock, water, cabbage, potatoes, carrots, beetroot, dill and bay leaf. Cover and simmer for 50min or until the vegetables are nice and tender. Stir in the vinegar.
