Unfortunetly I cannot take any credit for this recipe. This is a Jamie Oliver Recipe taken from his "Cook with Jamie - My Guide to Making You a Better Cook" book. I really enjoyed this recipe and would love to share it with everyone and anyone.
It is absolutely true what Jamie says that raw beetroot is absolutely amazing in a salad. It gives you this absolutely deep and intense colour as well as flavour. It is absolutely amazing to find what different types of beetroots that are available from candy striped, orange or golden colour to purple. They also come in so many different shapes and sizes. So if you are making this recipe try using a wide variety of beetroot. The good news is that they are finally available in South Africa. Check this website out for seeds and seedlings.
Ingredients:
4 medium sized beetroots (like I mentioned earlier try getting a variety of colours) thouroughly scrubbed, and finely sliced into thin strips (if you have a mandolin this is good time to put it to good use)
3 ripe pears also washed and finely sliced into thin strips
sea salt and freshly ground black pepper
200g of feta cheese
small bunch of baby mint leaves
juice of one lemon
150ml of olive oil
Firstly you would need to make the lemon dressing. It is best if you do it a day before serving so that the flavours can fully develope. Take a sterilized bottle and add the lemon juice, olive oil and some freshly grind black pepper and sea salt. Shake it up . Put in the fridge for tomorrow's awesome beetroot salad.
Now for your salad. Dress your beetroot and pears in the home-made lemon and olive oil dressing. Season with more salt and pepper. Don't be afraid to taste. You will then be able to decide if you need to add some more dressing or seasoning all depending on the sweetness of your pears and beetroot.
Crumb the feta cheese on top of the beetroot salad. Sprinkle your baby mint leaves.
And that is it . Simple, easy and totaly rustic.
