HOME-MADE TARTARE SAUCE:
Ingredients:
2 hard boiled eggs, finely chopped
15ml chopped parsley
15ml snipped chives or spring onions

10ml Dijon Mustard
Mix all the ingredients with 250ml of your home-made mayo

125ml Cream
15-30ml Tomato Sauce
pinch of cayenne pepper or paprika
dash of brandy
Mix all the ingredients together.

250ml Plain Yoghurt
5ml Lemon Juice
5ml Curry Powder
Mix all the ingredients together.
HORSERADISH SAUCE:

125ml Creamed Horseradish
60ml Cream

Combine all the ingredients until smooth.
ROASTED RED PEPPER:
250ml Home-Made Mayo
1 Red Pepper
4 Drops of Tabasco Sauce
Cutt the pepper in half, remove the seeds and grill until the skin is charred. Remove from the oven and wrap in a plastic bag. Allow to cool, remove skin. Puree in blender/food processor and mix in the mayo and tabasco sauce.

ALISON'S GREEN DRESSING:
This has to be one of my favourite dressings. It is so versatile, you can use it as a dip, sandwich spread, or salad dressing. It also goes exceptionally well with fish.

Ingredients:
1 clove of garlic
2 eggs
60ml of white vinegar
5ml salt
2ml sugar
5ml Dijon Mustard
60ml of roughly chopped mixed herbs of your choice I personally love using, chives, parsley, dill, thyme, basil or whatever is available in the garden.
Peel the garlic, place in a food processor/blender along with the eggs, vinegar, salt, sugar, mustard and herbs. Process/blend until the ingredients are well combined. With the motor still running, slowly pour the oil in a thin, steady stream until the dressing is thick and creamy.
