Watermelon-Tomato Blush Cocktail

This tangy non-acholic cocktail is packed with energy-yielding carbohydrates is so refreshing you can have it with breakfast, brunch or even a pick-me-up at any time of the day.

Ingredients: serves 4

1 ripe mango, peeled and chopped;
450g ripe tomatoes, skinned, halved and seeded;
700g ripe watermelon, seeded and cut into chunks;
Zest and juice of 1 orange;
Zest and juice of 1 lime;
Crushed Ice;
Orange, Lime or Lemon slices

Method:

In a food processor or blender, pureer the mango, tomatoes, watermelon, orange and lime juice and their zest until smooth.

Half fill 4 large glasses with crushed ice. Fill with the Watermelon-Tomato Blush Cocktail.

Garnish with a lemon, orange and/or lime slices.

Serve Immediately.

FRESH IDEAS:
For a summer starter serve this cocktail in a bowl as a cold soup. If served without ice, with a little added low fat yoghurt whisked into it, resembles a Scandinavian Fruit Soup!
